The Firebirds Wood Fired Grill concept was born in 2000 in Charlotte, North Carolina, by founder Dennis Thompson. Inspired by the open-fire cooking and bold flavors of the Rocky Mountain West, the original location was conceived as a “Rocky Mountain Grill.” The focus on the power of the flame quickly defined the brand, leading to its current, polished casual iteration that has since expanded nationwide.
